LSA Choc Chip Biscuits paleo friendly

Before I went away last week I made sure there was plenty of foods for hubby to eat that were Paleo so he wouldn't fall off the wagon and I know how he likes his sweet treats so I quickly threw together these biscuits (which he dubbed horse feed biccies) Regardless of this strange name he loved them so I whipped up more today. I however am naming them LSA Choc Chip Cookies, sounds a bit nicer LOL.

Super easy to make and paleo friendly!






















LSA Choc Chip Cookies

Ingredients:
  • 1 cup LSA
  • 2 Tbsp coconut oil
  • 2 Tbsp honey
  • 2 Tbsp choc chips (70% dark unsweetened) or cacao nibs
  • 1/4 tsp baking powder
Method:
  1. Mix all ingredients together in a bowl.
  2. Roll into a log using cling wrap then place into freezer for up to half an hour to firm up a bit.
  3. Preheat oven to 180 degrees and line a baking tray with a silicone mat or baking paper.
  4. Slice log into rounds and lay flat on baking tray.
  5. Bake for approx 10-15mins and allow to cool completely before removing from tray.
** UPDATE ** Recently I have been just squeezing mixture together well and rolling into balls then freezing for a bit before I flatten them down gently then bake. Chilling will help them hold shape.

I got 10 biscuits out of this mixture.

Paleo Whoopie Cookie for 1

We are currently on day 3 of our new paleo journey and I am feeling amazing. So far so good and I am not missing much, hubby on the other hand is still coming to grips without dairy milk in his morning coffee. I'm sure he will survive LOL.

So far I've made a few paleo baked items I have found online (I'm sure I've said it before, but I love pinterest!) some with success and some without (edible but not quite what they should look like) but today I decided to wing it and make something myself and it worked out! This came about because I was sick of seeing the lone egg yolk sitting in my fridge that needed using up (I hate wastage so I was determined to use it!). Enter the Paleo Whoopie Cookie for 1.






















Paleo Whoopie Cookie for 1

Ingredients:
  • 2 Tbsp tahini
  • 1 Tbsp honey
  • 1 egg yolk
  • 1 Tbsp cacao (or cocoa) powder
  • 1/4 tsp vanilla paste
  • Pinch of salt
  • Pinch of baking soda
  • Almond butter for centre filling (or any nut butter)
Method:
  1. Preheat oven to 180 degrees and line a small baking tray with parchment paper.
  2. Mix all ingredients together in a small bowl until well combined.
  3. Place the mixture on the tray in 2 even size round scoops and flatten slightly.
  4. Bake for approx 8mins.
  5. Allow to cool before sandwiching together with almond butter (or filling of choice).
Another centre filling option would be frozen banana ice cream or whipped coconut cream!

Banana Quinoa Cookie Cakes

few months ago I made some super yummy Banana Bread Cookies from The Girl Who Ate Everything but when I decided to make more I wanted to make them a little bit on the healthyish side. Total credit goes to the original recipe, these are just a better option for those wanting to avoid some ingredients & they still taste pretty amazing!






















Banana Quinoa Cookie Cakes
Makes approx 30

Ingredients:
  • 150g medijool dates, seeds removed
  • 60g coconut oil
  • 1 egg
  • Splash of vanilla
  • Pinch of salt
  • 310g banana
  • 130g natural yoghurt (plain or greek)
  • 80g coconut flour
  • 60g spelt flour
  • 100g white quinoa (cooked and cooled)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 100g chocolate chips
Method:
  1. Add dates and oil to the thermie jug and blitz on speed 6 for 20 seconds.
  2. Scrape down sides and repeat speed 6 for 20 seconds.
  3. Add egg, vanilla, salt, banana, yoghurt and mix on speed 5 for 10 seconds.
  4. Add remaining ingredients except chocolate chips and mix speed 4 for 8 seconds.
  5. Add chocolate chips and mix speed 4, reverse for 4 seconds.
  6. Place in fridge to chill for about 15mins and preheat oven to 180 degrees and prepare 2 baking trays with either a silicone mat or baking paper.
  7. Scoop mixture into dobs onto the prepared baking trays and bake for approx 15mins.
  8. Allow to cool completely before moving them as they will be soft.
